4 Favourite Christmas Recipes

Wow, another year has flown by and it’s nearly time to welcome in the holiday season! What’s a better way to get you in the holiday spirit than dreaming of those festive dishes like pavlova, glazed ham, etc. This year could also be a good time to bring in new dishes and traditions so we put together some of our favourites linked with recipes we can vouch for. Best part is, there’s still a whole month to get planning and preparing!

Christmas Trifle

Trifle looks simply beautiful on the Christmas table! For those with minimal time, this is a great recipe using store bought cake for a super easy trifle taking around 40min to complete.

Ingredients:

  • 1 Punnet blueberries
  • 2 Punnets strawberries
  • 4 Egg yolks
  • 1 tsp Vanilla bean paste
  • 1/2 cup Castor sugar
  • 1/2 cup Cornflour
  • 1 1/2 tsp Vanilla extract
  • 3 tbsp White sugar
  • 6 cups Cranberry juice
  • 3 cups Milk
  • 2 1/2 cups Thickened cream
  • 1/3 cup Fruit flavoured liquor, orange or other
  • 7 tsp Gelatine powder 
  • 1 X 450 g madeira cake or pound cake

Christmas Cake

This cake is buttered rum, packed with dried fruit, and delicious! It requires overnight soaking then should take up to 4 hours to complete.

Ingredients:

  • 175 g Cranberries, dried
  • 800 g Dried fruit, mixed
  • 4 Eggs, large
  • 3 tbsp Maple syrup
  • 225 g Muscovado sugar, light
  • 225 g Plain flour
  • 2 tsp Spice, ground mixed
  • 85 g Pecans or walnuts, toasted, then roughly chopped
  • 150 ml Apple juice
  • 275 g Butter, unsalted
  • 7 tbsp Rum, dark
  • Zest 1 small orange

Christmas Pudding

A British tradition that’s loved in Australia, Christmas pudding does require more effort and time, but is so worth it with every bite! Expect to wait 7-8 hours for this wee treat.

  • 1 oz Candied peel
  • 1 Cooking apple, small
  • 1 lb Dried fruit, mixed
  • 1/2 tbsp Lemon, zest
  • 1 tbsp Zest, orange
  • 2 Eggs, large
  • 1 tbsp Lemon juice
  • 4 oz Brown sugar, dark
  • 1 1/2 tsp Cinnamon, ground
  • 2 oz Self-rising flour
  • 1 tsp Mixed Spice
  • 4 oz Suet
  • 1 oz Almonds, whole
  • 4 oz Breadcrumbs, fresh
  • 2 tbsp Orange juice
  • 1/4 cup Brandy

Christmas Pavlova

It feels like Christmas isn’t complete without a good old Pav. We love this recipe creating a festive twist, wreath style.

  • 1 cup Blueberries
  • 1 Mint to decorate
  • 1/2 cup Pomegranate seeds
  • 2 cups Raspberries
  • 2 cups Strawberries
  • 4 (5 1/2 oz/160g) Egg whites, large
  • 2 tsp Cornflour
  • 1 1/4 cups Sugar
  • 1 tsp White vinegar
  • 2 cups (16floz/454ml) double cream (whipped)
